Blanco’s Mutton Shank Casserole
(Serves 8 – 10)
5 – 6 Mutton Shanks cut 4cm thick
2 Onions cut into rings
1kg Carrots cut into 2 ½cm chunks
2 Tins Whole Peeled Tomatoes OR Chopped Tomatoes
2 Sprigs Rosemary
1 Tablespoon Oregano
4 Cloves Garlic (chopped)
250ml Red Wine (optional)
250ml Stock or Water
Salt and Pepper to taste
- Brown shanks in hot pan and transfer to casserole dish.
- Place onion rings and chopped garlic on the meat and add rest of ingredients.
- Bake in medium oven (160C) with lid on for 3hours or until meat is tender.
- Serve with rice or Boiled Baby Potatoes.
