Blanco’s Mutton Shank Casserole

(Serves 8 – 10)

5 – 6 Mutton Shanks cut 4cm thick

2 Onions cut into rings

1kg Carrots cut into 2 ½cm chunks

2 Tins Whole Peeled Tomatoes OR Chopped Tomatoes

2 Sprigs Rosemary

1 Tablespoon Oregano

4 Cloves Garlic (chopped)

250ml Red Wine (optional)

250ml Stock or Water

Salt and Pepper to taste

  1. Brown shanks in hot pan and transfer to casserole dish.
  2. Place onion rings and chopped garlic on the meat and add rest of ingredients.
  3. Bake in medium oven (160C) with lid on for 3hours or until meat is tender.
  4. Serve with rice or Boiled Baby Potatoes.
